This is a blend of Brazil Cafezinho pulped natural Cerrado with some Puerto Rico, Yauco Selecto. It has an excellent taste, it can be used for espresso or better yet for those who like the big name coffee shops this is for you!!!, brew it the way you normally brew your coffee. This coffee is certainly one of the best dark roast coffees we had. We roast it at full city with no oils.

Here are our cupping notes:

Dry Fragrance (1-5): 4.6 - Sweet Aroma

Wet Fragrance (1-5): 4.1 - Chocolaty

Acidity (1-10): 7.1 - Balanced

Body (1-10): 8 Smooth

Flavor (1-10): 8.3 - Honey, Vanilla

Aftertaste (1-10): 7.7 - Excellent, makes you want some more

Correction (1-10): 0

Standard: +50

Total score from our cupping lab: 89.8

Assessment:
This is an excellent choice for:

Cappuccino

Straight Espresso

French Press

Regular Coffee Maker

CELEBES KALOSI COFFEE (INDONESIA)

Formerly known as Celebes Kalossi.

This coffee is a little hard to find but worth the search. Similar to the best Sumatran but less rich and more body, acidity and vibrance. Great coffee!

Sulawesi is the same coffee that the Luwak (Toddy Cat) eats. They eat the coffee cherry which is then picked and process by the locales to become "Kopi Luwak" coffee.

BISCOTTI Flavored Coffee

Biscotti (plural of Italian biscotto) are crisp Italian cookies traditionally flavored with anise. Traditionally, biscotti are made by baking cookie dough in two long slabs, cutting them into half inch thick pieces, and reheating them to dry them out. A basic recipe is a mix two parts flour for one part sugar with enough eggs to create a batter. To the mixture baking powder and flavourings such as anise, chocolate, or nuts are added. The slabs are baked once for some twenty five minutes. They are then cut up into individual cookies and cooked a second time for a shorter period of time. The longer the second period, the harder the cookies. Originally the cookies were twice-baked so they could be stored for long periods of time.

Almond & sweet with crunch.

FRANGELICO Flavored Coffee

Frangelico (frangelica) flavored coffee is made with the closest flavorings to the actual hazelnut liquor flavor.

Frangelica or Frangelico is made in the same manner as most nut liqueurs: nuts are crumbled up and then left to soak in the base spirit. After the spirit has absorbed the flavor of the nuts, the liqueur is filtered, sweetened, and bottled.

To make Frangelico (frangelica) flavored coffee we use fresh roasted coffee beans from Panama, Central America. Then we add the finest coffee flavorings, and then rest the beans to bring you the best possible taste.

The dish has spread across Europe and the world, and is known as 'flan' in Spanish-speaking countries. In the United States, the dish is now best-known in a Latin American context, so is called flan; in Europe, it is generally known as crème caramel, although in the UK it is sometimes colloquially called "caramel custard".

SANTO DOMINGO COFFEE (DOMINICAN REPUBLIC) 83.4 pts

Santo Domingo coffee its mild and soft, characteristics of an island coffee. There is a lot going on in this cup, it has a lot of different flavors. The main flavor linked to the acidity are grapes and apples. There is also hints of vanilla and spice (allspice) that lies behind the fruit in the coffee beans.

This is clearly an island (Dominican Republic, Puerto Rico, Jamaica) coffee and not from high altitude. The cup has a lot of different flavors which makes it complex.

You will enjoy this excellent Dominican Coffee.

NATURAL DECAF COFFEE

With the CO2 process, pre-steamed beans are soaked in a liquid bath of carbon dioxide at 73 to 300 atmospheres. After a thorough soaking, the pressure is reduced allowing the CO2 to evaporate, or the pressurized CO2 is run through either water or charcoal filters to remove the caffeine. The carbon dioxide is then used on another batch of beans. This same process can also be done with oxygen (O2). These liquids work better than water because they are kept in supercritical state near the transition from liquid to gas so that they have the high diffusion of gas and the high density of a liquid.

CAPPUCCINO Flavored Coffee

Cappuccino is a large Italian beverage prepared with espresso and foamy steamed milk. A cappuccino differs from a cafe latte, which is mostly milk and little foam. Besides a quality shot of espresso, the most important element in preparing a cappuccino is the texture and temperature of the milk. When a barista steams the milk for a cappuccino, he or she creates microfoam by introducing very tiny bubbles of air into the milk, giving the milk a velvety texture and sweetness. In some places, skilled baristas create latte art when pouring properly steamed milk into the espresso, making designs such as apples, hearts, leaves, rosettes, and corporate logos.

A banana split is an ice cream-based dessert. In its classic form it is served in a long dish called a "boat". A banana is cut in two lengthwise (hence the split) and laid in the dish. Variations abound, but the classic banana split is made with scoops of vanilla, chocolate and strawberry ice cream served in a row on the split banana. Pineapple topping is spooned over the vanilla ice cream, chocolate syrup over the chocolate, and strawberry topping over the chocolate. It is garnished with crushed nuts, whipped cream and maraschino cherries.

Banana Split coffee is made with a flavoring that resembles the classic banana split above.

Apfelstrudel ("Apple strudel") is a traditional pastry of southern Germany and many countries that once belonged to the Austro-Hungarian empire (Austria, Croatia, Hungary, Czech Republic, Slovakia, Slovenia, etc.), and is the most widely known kind of strudel (streudel).

Apple Strudel consists of an oblong strudel pastry jacket with a filling of chopped apples, sugar, cinnamon, raisins and bread crumbs. Rum is sometimes used to add flavour. Other ingredients include pine nuts, walnuts, or slivered almonds. The art of preparation is in making the pastry very thin and elastic; it is said that a single layer should be so thin that one could read a newspaper through it.
